Dear Friends,

When visiting friends, I usually like to bring along a bean or other type of salad. It can be made the day before you need it and dressed with a simple vinaigrette and put in the fridge overnight until you're ready to go.

You can also bring the dressing separately to travel. A hearty salad, crusty bread, refreshing drink, and chunk of cheese is a more than decent meal. I don't know why I like to give you salad recipes in the summer, but it just seems so practical because they are cool and go with any grilled fish or meat dish. With corn on the horizon, salads are even more desirable. So, from my inner Julia Child, "Bon Appetit!"!

Jicama Salad

1 Medium jicama, peeled and julienned (about two cups)

3 Oranges, peeled and cut in 1/2-inch pieces

1 Red bell pepper, roasted, seeded and julienned

1 Green bell pepper, roasted, seeded and julienned

1/4 Cup roasted pine nuts

6 Tablespoons sunflower oil

4 Tablespoons cider vinegar

1/2 Teaspoon red chili powder

2 Jalapeno peppers, seeded and minced

Combine oranges, jicama, peppers and pine nuts in a large bowl. Mix the remainder of ingredients in a small mixing bowl and whisk to blend. Pour over salad and toss or save in a separate container to bring along.


Blueberry Relish

3 Quarts of blueberries or huckleberries

2 Cups brown sugar

1 Cup white sugar

1-1/2 Cups cider vinegar

1 Teaspoon each: salt, ground cloves, allspice, cinnamon

Simmer vinegar and sugars together for 5 minutes. Add berries and spices, simmer all for 15 minutes. Cover and leave overnight. Next day, heat to boiling and pack into sterilized jars. Seal with paraffin.

They contain powerful antioxidants, which fight off many serious health threats, and they even help maintain good skin. Recent studies are ongoing, but they show lots of promise in helping to reduce the effects of Alzheimer's and dementia.
